Death!
Gum paste leaves, painted and then dusted with gold dust
Our assignment was a two-tier wedding/special occasion cake. I didn't think I would have time to do this, but I went for it anyway. I hand cut almost every gum paste leaf (because I wanted them to be unique and stylized), I used a food marker to draw (free hand) every tree and picture on the fondant and then used a paint brush to apply a mixture of gold, orange, and brown coloring powder. Also, the curly branches are gum paste too.
And not that it matters, but it was a lemon cake with key lime creme anglaise buttercream, and raspberry filling.
Harry Potter Cake 6-10
isomalt Elder wand that turned out perfectly. I just started twisting a strand of it and realized what I could do.
The three brothers. I'll admit, I had to cut off more of their legs than I intended to, but once I started drawing I couldn't do anything about it. I'm still satisfied with the result.
Harry Potter Cake 11-15
Deathly Hallows symbol made from royal icing that was airbrushed black. I was going to go with the smooth side facing out, but I like the textured look of the rough side.
K-Comp plate (earned gold)
Seared Black cod fillet with a pineapple citrus beurre blanc, tropical fruit salsa with orange supremes, Israeli couscous, and buttered carrots and asparagus. One of the plates has blood orange supreme also, which I really like.
Seared Salmon with rock shrimp salsa, citrus beurre blanc, artichoke heart and white bean ragout, creamed leeks and sundried tomato, sautéed asparagus, and infused oils
This was on of my favorite dishes we made in Chef Todd's class: Steak with creamed corn, a potato cake, roasted tomato wedge, and veggie bundle

Bacon wrapped elk roulade stuffed with cranberry herb stuffing, sweet berry demi-glace, potatoes gratin, root vegetable hash, and a vegetable medley

My sushi platter (I couldn't find a smaller platter to use, hence all the empty space - I'm still proud as this was the first time I ever did sushi)
